Hello!
Did you know that the crayfish is invading? They arrived
from America and now they have made their homes in the banks of the rivers and
the lakes in France. They cause damage by burrowing huge long tunnels into the banks so that eventually they
collapse.
They are surprisingly easy to catch, and dipping a net into
the water will soon gather an impressive harvest. They need rinsing before eating (up to 5
times) and keep an eye on them as they are keen to escape. Then tip them into boiling water, cook and
serve! An striking dish, and a delicacy in
some parts of the world. Bon appetit!

are mixing it up with a doubles competition on the banks of the Dordogne at the
