Did you know that at the heart of St Foy, right under our
noses, is a wonderful pâtissier? With over 20 years of experience, including 3
years alongside Heston Blumenthal at The Fat Duck, Jerome Druart has finally
returned to his native France and has set up shop under the Arcades in the
centre of Ste Foy.
Not only does he make wonderful cakes, delicious homemade
ice-creams and mouth wateringly good chocolates, he’s now sharing his knowledge
with a series of patisserie courses running through from July – September.
I had the great pleasure of attending his first session ‘Autour
de la Fraise’ where we learnt how to make a Fraisier (one of my all-time
favourites – after anything chocolate) and strawberry marshmallow. Jerome’s experience as a chef and a teacher gave
us tips and chef’s secrets and we all left with a completed Fraisier and a stack
of marshmallow! Needless to say, the
cake is all gone… - but now I know how to make another!

then I suggest you take a course with Jerome, I’ll certainly be back! We were
in a professional Pastry kitchen and Jerome speaks flawless English, especially
useful when my technical French began to falter.
